I call this the “mock clotted cream”. This is so delicious to have on hand to spread on a scone with a bit of jam, on a muffin, or on a nice warm toasted piece of banana bread. It tastes rich and decadent, and refrigerated it keeps for 7-10 days. Be sure to use a good quality pure vanilla extract. You can always change it up by adding lemon or orange zest, or a tablespoon or two of your favorite liqueur — orange zest and Grand Marnier!!! Yes, please!
- 16 oz Cool Whip thawed
- 8 oz Sour Cream
- 2 tsp Vanilla
- 2 Cups Powdered Sugar
- Mix all ingredients together. Keep refrigerated, or freeze and use as needed.
